When Joe Wilson looks at these trees, he sees one thing. Joe Wilson, General Manager, Missouri Northern Pecan Growers: "Money." And in this case, it really does grow on trees. Joe Wilson, General Manager, Missouri Northern Pecan Growers: "With our organic pecans, we send them all over the United States, we export a lot to Canada, and we have, I don't know, around six or eight customers in Europe that we export to. And when I say customers, these are food distributors, they're ordering large quantities at a time." Pecan harvest is in full swing right now, meaning it won't be long before these nuts are back at the Missouri Northern Pecan Growers Facility in Nevada, ready to be processed. Joelle Mason, Office Manager, Missouri Northern Pecan Growers: "They go into the hot water bath, and then they go into the cracking, the shelling, try to get out as much pecan shell as possible." Once they're cracked, the pecans come to this room. The meats go inside of a hopper, just like this one. But the life of the shell isn't over yet. These shells will be burned in a furnace just outside of this room where they'll generate heat that rises up through the hopper, drying the pecans, preventing any molding. Joelle Mason, Office Manager, Missouri Northern Pecan Growers: "And then they go into the inspection room and then our inspectors will get out any additional objects before the consumer gets them." After that, it's up to you what happens next. Wilson says they could end up in pecan pie, or as an ingredient in another dish. Or there's his favorite way to enjoy them. Joe Wilson, General Manager, Missouri Northern Pecan Growers: "I just enjoy a fresh pecan, just eating the pecan out of the field."
